Orange Brownies

Need something yummy to try?? (don't let the picture frighten you away - I have no talent what-so-ever at taking food pictures- wish I did!!)

I have made these twice in the last several weeks. Once just for fun and to try them out ~ The Man told me they tasted like Orange Danish so he was going to have them for breakfast. And he did.

Because of The Man's recommendation, I made these last Saturday for our Sunday School class on Sunday.

Delish!!

Orange Brownies

1 1/2 cups all-purpose flour
2 cups sugar
1 teaspoon salt
1 cup (2 sticks) butter, softened
4 eggs
2 teaspoons pure orange extract
1 teaspoon grated orange zest

Glaze:
1 cup confectioners' sugar
2 tablespoons orange juice
1 teaspoon grated orange zest

Directions:
Preheat oven to 350 degrees F.
Grease a 13 by 9 by 2-inch pan and set aside. In a mixing bowl, stir together flour, sugar, and salt. Add butter, eggs, orange extract, and orange zest and beat with a handheld electric mixer until well blended. Pour batter into prepared pan and bake for 30 minutes, or until light golden brown and set. Remove from oven and pierce top of entire cake with a fork.

Combine all ingredients in a bowl, stirring until smooth. Pour glaze over cake. Cool cake and cut into squares.

Fall Into Flavor - Dip and Chops - updated



I am sad to say, but today
is the last "Fall Into Flavor" with Linda at
2nd Cup of Coffee. But it has been fun! I still have
many recipes to try from the list !


On The Fat Track:


This is a four ingredient snack dish that Demolition D loves!


Chili Dip

1 8oz package cream cheese, softened
1 can chili (bean in or bean out)
Desired shredded cheddar cheese.

Spread cream cheese in pie plate or dish (microwaveable).
Spread chili on top and sprinkle with cheese. Heat in microwave for 45 -60 seconds. (Check at 45 seconds)

On The Light Track


This one is for Becky. She seemed to think my other recipes had too many carbs! hehe - they did, not to mention fat too, but that was the fun of the meme!

So this dish is for you!


Mushroom Stuffed Pork Loin Chops

3/4 cup mushroom slices
3 tablespoons green onions, chopped
1 tablespoon oregano (I added some rosemary too, very good)
1/4 teaspoon salt
1/4 teaspoon pepper
6 boneless pork loin chops, cut 3/4" thick, cut a pocket in each with a paring knife
Worcestershire Sauce

Mix the first 4 ingredients. Stuff each chop with about 2 tablespoons of mixture. Secure with toothpick. Drizzle each chop with Worcestershire sauce.

Pre-heat indoor or outdoor grill.
Grill uncovered for 12 to 15 minutes or until done (160 deg) and juices run clear, turning once halfway through grilling. Or bake, 350 deg oven, for 20-30 minutes or until juices run clear. Remember to remove toothpicks after cooking.

Serving Suggestion: Baked Potatoes and Sauteed Asparagus.


Calories: 241; Carbs 4; Fat 14; and if you watch points: 6

Updated: Recipe is easy to cut in half. Also, each stuffed chop can be wrapped and frozen. for another time, makes several meals at once! Just thaw chops needed, and cook according to directions.

Loaded Baked Potato Casserole



I am kinda sad that next week will be the end of the recipes through 2nd cup of coffee!

Of course, as Linda so kindly pointed out, we all might be rolling to Thanksgiving dinner, so maybe she will want to try a low calorie cooking meme.

So here is a goodie that is chock full of fat (but can be, lowered - use yogurt instead and lower fat cheese).



Loaded Baked Potato Casserole

2lbs mashed potatoes
2 eggs, beaten
1/2 cup sour cream
1/4 cup bacon crumbled (Hormel real bacon bits works great)
1/4 cup butter, melted
1/4 cup green onions
1 cup cheese
salt and pepper to taste

Mix all ingredients. Pour into baking dish. Sprinkle with more cheese if desired. Bake at 400 deg for 20 minutes or until set.

Enjoy and then go for a wonderful walk!

White Chocolate Hazelnut Pie

It's another yummy Monday with lots of recipes at Linda's 2nd Cup Of Coffee.

The Man loves to make this recipe and everyone loves to eat it!

It is simple and easy and very yummy and comfy!








White Chocolate Hazelnut Pie

1 chocolate cookie pie crust
1 1/4 cups cold milk
2 tablespoons hazelnut-flavored coffee
2 (3 1/2 ounce) packages white chocolate flavor instant pudding & pie filling mix
1 (8 ounce) container frozen non-dairy topping, thawed and divided


Beat milk, flavored instant coffee, pudding mixes, and 1/2 of the whipped topping in medium bowl with wire whisk 1 minute. (Mixture will be thick.).
Spread in crust. Spread remaining whipped topping over pudding layer in crust.
Enjoy immediately or refrigerate until ready to serve. Garnish as desired.

Fall Into Flavor and Celebrate - Buffalo Style


I am on business trip with my hubby (Raleigh N.C.), but I still wanted to take part in Linda's Fall Flavor and Tiffanies Celebrate fall (I have left something out of my post I love recipes!!! I am a recipe junkie) . . .

I had heard several people talk about a great Buffalo Chicken Dip, well, while looking for it, I came across this casserole. Made it for my Hooter lovers (wait, I guess that does not sound very good, but I am going to leave it),
and they gobbled it up.


Easy Easy Dish!
Buffalo Chicken Casserole
1/2 Cup Uncooked Regular Long-grain White Rice
1 Cup Chicken Broth
1 Tbs. Olive Oil
1 Lb. Boneless Skinless Chicken Breasts, Cut Into Thin Strips
2 Medium Stalks Celery, Thinly Sliced {1 Cup}
1 Can {14.5 Oz.} Stewed Tomatoes, Undrained
1/2 Cup Buffalo Wing Sauce
1/4 Cup Blue Cheese Dressing

Cook Rice In Chicken Broth 20 Minutes As Directed On Pkg. Meanwhile, Heat Oven To 350 Degrees. In 12 Inch Skillet, Heat Oil Over Medium-high Heat. Add Chicken And Celery; Cook 5-7 Minutes, Stirring Frequently, Until Chicken Is No Longer Pink In Center. Remove From Heat. Open Can Of Tomatoes; Cut Up Tomatoes In Can {with Kitchen Scissors Or Hands, Is The Easiest Way} Stir Tomatoes And Wing Sauce Into Chicken Mixture. Spray 8-inch Square Baking Dish With Cooking Spray. Spoon Cooked Rice Into Dish. Spread Chicken Mixture Over Rice {do Not Stir} Bake 25-30 Minutes Or Until Hot In The Center. Drizzle Dressing Over Top.

I bought the Hooters Sauce at the grocery store - that worked well. Another time I used the sauce that is sold at Sams Club (Cosco might have it too). Worked just as good.

Squash Tomato Pie



I made this dish Saturday evening when Traveler came over. It was great with baked snapper!

EVEN Will ate it

(he is not fond of squash casserole).

Squash Tomato Pie

3 Yellow squash, peeled and sliced
1/3 Cup plain yogurt
½ cup egg substitute (or 2 eggs)
1 Cup bread stuffing mix
½ cup onion
½ cup green bell pepper
¼ cup grated parmesan cheese
1 teaspoon salt
½ teaspoon cracked black pepper
2 or 3 tomatoes peeled, sliced thin
¼ cup sun dried tomato and feta cheese (or plain)

Preheat oven to 350 deg. Steam squash in steamer basket over boiling water for 10 minutes or until tender (or in microwave). Drain and mash with a fork. Mix the yogurt and egg in a bowl and stir in the squash, stuffing mix, onion, bell pepper, parmesan cheese, salt and cracked pepper.

Spoon the squash mixture into a lightly greased medium baking dish or a 9 inch pie plate. Layer with tomatoes, slightly overlapping and sprinkle with feta cheese and black pepper to taste. bake for 45 to 60 minutes. Broil for a few minutes if desired to brown the top.

Fall Into Flavor - Crockpot Jambalya




Crockpot Jambalya

In crock pot, measure in the following:





24 ounces chicken breast halves
½ lb kielbasa, sliced diagonal into pieces
1 can diced tomatoes
1 cup green peppers
1 cup onion
1 cup celery
½ cup chicken broth
1 tablespoon cayenne pepper
1 teaspoon dried oregano
1 teaspoon Cajun seasoning
1 teaspoon garlic

Set crock pot on low and cook for 6 to 7 hours, until bubbly.

This can be cooked on the stovetop – cook until it boils and chicken is cooked through and tender.

Serve over rice.

Fall Into Flavor - Mariachi Chicken Bundles

Mariachi Chicken Bundles

6 chicken breast – flattened

¼ cup diced red peppers, or a mix of colors
¼ cup minced green onion
2 tablespoons chopped black olives

½ cup cream cheese – room temperature
1 cup salsa


Preheat oven to 350 deg.

In a small bowl, mix the veggies. In a separate bowl, stir cream cheese and salsa until combined (I like to zap the cream cheese in the microwave to make this quicker).

Place the flattened chicken breast in your hand, shiny side down (back side up). Place a tablespoon or two of veggies in center. Fold up chicken breast and place seam side down in greased baking dish. After placing all bundles in the pan, spread cream cheese salsa mix over the top. Sprinkle with paprika.

Bake, covered, for 1 hour or until chicken is cooked through,(internal temperature is 170 deg).

This is a recipe I found a couple months ago on Group Recipes and it is very SIMPLE and, not healthy, but GOOD.

Butter Pecan Pie


Ingredients

• 1 cup coarsely chopped pecans
• 1/4 cup butter or margarine
• 1 tub Duncan Hines® Creamy Home-Style Buttercream Frosting
• 1 (8 oz) pkg cream cheese
• 1 cup frozen non-dairy whipped topping, thawed
• pecan halves
• 1 9-inch prepared graham cracker crumb pie crust

Directions

1 Place pecans and butter in 10-inch skillet on medium heat. Cook, stirring constantly, until butter is lightly browned. Pour into heat-proof large bowl.
2 Add frosting and cream cheese. Stir until thoroughly blended. Fold in whipped topping.
3 Pour into prepared crust. Garnish with pecan halves, if desired. Refrigerate for 4 hours or until firm.

The Gathering

"The Gathering" was for my step-daughter's 21st Birthday.

One thing to note about blended families, by the time all sides and Grandparents have all taken their turn, Birthdays and Christmas celbrations could have gone on for a week or two, which, especially for birthdays, is great! Why should it be limited to one day?!? Life should be celebrated!


But I have to say I was ready to get this gathering over . . . it was the last after a busy summer of "gatherings"


. . . two weeks ago for my now 15 year old.


. . . three weeks before that for my now 12 year old


. . . one week before that - at the beach with a smaller crowd for dear hubbies b-day


. . . four weeks before that for my 18 year old step son (it was smaller and at a restaurant but
still planning)


. . . three weeks before that it was stepson's graduation - Our side and all his mom's side came to
our haciendi for lunch afterwards


. . . three weeks before that my MIL
. . . three weeks before that my Mom


With the close of Saturday evening's celebration, we have a break until Christmas and then it picks up again next April.

A friend at church makes these wonderful 7 or 13 or 15 - whichever you request - layer cakes. My MIL had a coupon for one so that was the birthday cake- it was great!

This was actually preceded by real food - Pastor Ryan's (Pioneer Woman) Roasted Roma Tomatoes, Watermelon Fruit Bowl, Mashed Potatoes, Addictive Cream of Broccoli Soup { these are listed first since they are meatless and my stepdaughter is a vegetarian} and then Fried Chicken and a Rotisserie Chicken

She enjoyed seeing everyone again in one spot. She has been in Amsterdam for the last 8 month - studying abroad and visiting her boyfriend who lives there. She left yesterday for her last year of her undergraduate degree - Theatre. As here license plate says - she is a drama queen, not a shy bone in her body (somehow I was left with the shy bone - well, maybe not shy but easily embarrassed - that bone was not removed)

She took over singing Happy Birthday to herslelf in Dutch - here it is:



Now it is time for a new week. Everyone will now be back into their regular routines and schedules . . . and we begin to countdown to College Graduation . . . . 8 months 2 weeks . . .

Fay and Needing something yummy to eat

Another day of Fay. I hate so many are dealing with high winds and flooding. I wish everyone could experience the pleasant change in weather that we have. August is usually hotter than hades! Yesterday's high- 77! I loved it. We usually have no wind, no breeze, this wind/breeze reminds me of being in the Rockies when I was little. The rain has been mostly a drizzle with just regular rain here and there. I hope that will be all Alabama and Mississippi will get . . . Stay dry, rent a great movie and , well why not have something great to eat


Balsamic Pork Tenderloin






1 tsp. pepper


1 tsp. salt


1 Tbsp. Rosemary (fresh)
1 Tbsp. thyme (fresh)
1Tbsp. Olive Oil
1 Tbsp. Balsamic Vinegar



1 1/2 - 2 lbs pork tenderloin



3 cloves garlic







Cut garlic cloves into slivers. In bowl mix first 6 ingredients. Set aside. With paring knife, cut 5 or 6 slit in tenderloin - or enough to accomodate garlic slivers - add more if you LOVE garlic. Insert garlic slivers in slits. Rub mixture from the bowl over tenderloins. Let marinade at least 30 minutes. It is is even better if you marinade longer.






Preheat oven to 500 degrees (trust me, this is great -unless your oven is really splattery, then it might smoke).






Place tenderloin in baking dish. Roast for 20-25 minutes until cooked to desired doneness. We like ours a little pink - but juices run clear. If you have a meat thermometer - 160 deg internal temp.
